Rhubarb Oatmeal Muffins

Ingredients

  • 1 cup buttermilk or sour milk
  • 1 large egg
  • 1 tsp vanilla
  • 1/2 cup canola oil (1/4cup oil+1/4cup unsweetened apple sauce)
  • 2 cups flour ( 11/2 cups flour + 1/2 cup whole wheat flour)
  • 3/4 cup brown sugar
  • 3/4 cup quick-cooking oatmeal
  • 1 tsp. baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups chopped fresh rhubarb

Preparation

Step 1

In a medium bowl,whisk together buttermilk,egg,vanilla and oil. In a large bowl,combine flour,sugar,oats,baking soda,baking powder and salt. Make a well in centre;pour in egg mixture and stir until just combined. Stir in rhubarb. Immediately spoon batter into 12 greased muffin pans.
Bake in a preheated oven of 375 deg. For approx. 18 - 20 mins or until tops are firm to touch. Cool muffins in pan x 5 mins, then remove to wire rack to cool completely.

Optional: Add 1/2 cup shredded coconut and 1/2 cup chopped pecans.
Sprinkle cinnamon and brown sugar on tops before baking.
