Ingredients

    cup buttermilk or sour milk

  • 1

    large egg

  • 1

    tsp vanilla

  • ½

    cup canola oil (1/4cup oil+1/4cup unsweetened apple sauce)

  • 2

    cups flour ( 1½ cups flour + ½ cup whole wheat flour)

  • ¾

    cup brown sugar

  • ¾

    cup quick-cooking oatmeal

  • 1

    tsp. baking soda

  • ½

    tsp baking powder

  • ½

    tsp salt

  • 2

    cups chopped fresh rhubarb

Directions

In a medium bowl,whisk together buttermilk,egg,vanilla and oil. In a large bowl,combine flour,sugar,oats,baking soda,baking powder and salt. Make a well in centre;pour in egg mixture and stir until just combined. Stir in rhubarb. Immediately spoon batter into 12 greased muffin pans. Bake in a preheated oven of 375 deg. For approx. 18 - 20 mins or until tops are firm to touch. Cool muffins in pan x 5 mins, then remove to wire rack to cool completely. Optional: Add 1/2 cup shredded coconut and 1/2 cup chopped pecans. Sprinkle cinnamon and brown sugar on tops before baking.
