whole reduced fat graham crackers
tablespoons light butter
oz. fat free sweetened condensed milk
cup fresh lemon juice
tablespoon lemon zest
Preheat oven to 350 degrees. Grind graham crackers in a food processor until fine crumbs form. (or place in a resealable plastic bag & crush with a rolling pin) Place crumbs in a small bowl. Melt butter & pour over cracker crumbs, mixing with fork until completely moistened. Press crumbs evenly onto the bottom of a 9" pie pan. Place crust in the refrigerator while preparing the lemon filling. In a medium bowl, combine condensed milk, eggs, mix until smooth. Add lemon juice & zest, stir until incorporated & pour into prepared crust. Bake pie for 15 minutes. Cool completely & for best flavor, serve chilled. Makes 10 servings.
