Ingredients
- Gravy:
- Frozen Fries (baked or fried)
- 2 cups Cheddar cheese curds
- 1 tablespoon vegetable oil
- 1 small onion, minced
- 1 small clove garlic, minced
- 2 cups beef broth
- 2 cups chicken broth
- 1 tablespoon ketchup
- 1 tablespoon balsamic vinegar
- 1 tablespoon whole peppercorns
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon onion salt
- 1/4 teaspoon beef boullion
- 3 tablespoons butter
- 3 tablespoons flour
- Salt and freshly ground black pepper, to taste
Preparation
Step 1
In a saucepan, heat the vegetable oil on medium heat and saute the onion and garlic until translucent, about 3 minutes. Add the broth, ketchup, balsamic vinegar, peppercorns, Worcestershire sauce, onion salt and boullion, and bring to a boil.
Meanwhile, in a separate saucepan on medium-high heat, melt the butter. Add the flour and stir for 2 to 3 minutes, making a roux. Allow to brown slightly. Whip the roux mixture into the stock and let simmer for about 20 minutes, until reduced by half and thickened. Season the sauce with salt and pepper. Keep warm.
Salt and pepper the fries while hot. Top with cheese curds. Remove the sauce from the stovetop and strain. Pour the sauce on top.
