Ingredients
- 12 chicken breast tenders, chopped
- 4 cans chicken broth
- 2 cans kidney beans, un-drained
- 2 cups salsa
- 2 cups whole kernel corn, frozen
- Cup instant rice uncooked
- 1/2 cup Monterey Jack cheese, shredded
- 1 bag tortilla strips

Preparation
Step 1
Cut chicken into 1 inch pieces. In a large sauce pan, combine chicken, broth, kidney beans, salsa and corn. Bring to a boil. Reduce heat and simmer, uncovered 5-10 minutes or until chicken is done. Stir in rice, cover and remove from heat. Let stand 5 minutes. Top bowls of soup with cheese and tortilla strips.
