    chicken breast tenders, chopped

    cans chicken broth

  • 2

    cans kidney beans, un-drained

  • 2

    cups salsa

  • 2

    cups whole kernel corn, frozen

  • Cup instant rice uncooked

  • 1/2

    cup Monterey Jack cheese, shredded

  • 1

    bag tortilla strips

Directions

Cut chicken into 1 inch pieces. In a large sauce pan, combine chicken, broth, kidney beans, salsa and corn. Bring to a boil. Reduce heat and simmer, uncovered 5-10 minutes or until chicken is done. Stir in rice, cover and remove from heat. Let stand 5 minutes. Top bowls of soup with cheese and tortilla strips.
