Ingredients

  • 1/2 cup flour
  • 1/2 t. salt
  • 1/2 t. oregano
  • 1/4 t. ground pepper
  • 1 cup sliced mushrooms
  • 1/2 cup Marsala Wine
  • 1/4 cup of Sherry
  • 4 T butter
  • 4 T olive oil
  • 4 boneless chicken pieces

Preparation

Step 1

Mix together flour, salt, oregano and pepper. Pound chicken pieces until appr. 1/2 " thick then coat chicken breasts in flour mixture. In skillet; add the butter and olive oil. Brown each chicken piece until lightly brown on both sides (do not cook through) then remove and set aside.

Slice 1 cup of mushrooms (or buy already sliced mushrooms) and add them to the skillet and sautee. Then add Marsala Wine, Sherry and browned chicken pieces. Cook in skillet only until juices run clear. (don't overcook)

Remove chicken pieces and thicken juices slightly if needed. Drizzle juices and mushrooms over chicken pieces.

Voila! A delicious dinner for 2 - 3 made in 1/2 an hour!
