Beet Soup

A Weight Watchers recipe that is very good.

Ingredients

  • 1 (14.5 ounce) can pickled beets
  • 1 can chicken broth
  • 3 green onions, with part of the green
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • 2 “globs” fat-free yogurt
  • fresh dill, to taste

Preparation

Step 1

Combine the first 5 ingredients in a blender and chill. Garnish with fat free yogurt or sour cream and sprinkle with fresh dill.
