Frijoles Negros (Black Beans)

Ingredients

  • 3 15 oz cans black beans (rinsed, drained)
  • 2 TBS bacon grease
  • 1/2 yellow onion (diced)
  • 1/4 green bell pepper (diced)
  • 1 tsp minced garlic
  • 1 Roma tomato (diced)
  • 1 tsp chicken bouillon
  • 1 tsp sazon seasoning
  • 1/2 cup water
  • 1 TBS sofrito
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Juice from 1/4 of one lime
  • 1/4 cup chopped cilantro

Preparation

Step 1

In large saucepan, melt bacon fat until hot. Cook onions and peppers until soft. Stir in garlic. Cook one minute more. Stir in tomatoes, bouillon, and sazon. Season with salt and pepper. Cook one minute more. Stir in beans, water, sofrito, and lime juice. Simmer on low 20-30 minutes, stirring occasionally.

Stir in cilantro last 5 minutes.
