Ingredients

    C+ 2 T flour

  • 1/4

    C + 1 T Parmesan cheese

  • 2

    T finely chopped parsley

  • 2

    cloves minced garlic

  • Salt & pepper

  • 2

    lge eggs

  • 1 1/2

    lb turkey tenderloin, cut into 4 pieces, pounded

  • 2

    T butter

  • 2

    t olive oil

  • 1

    lemon, quartered

Directions

Mix flour, salt, pepper, Parmesan, parsley & garlic. In shallow bowl, beat eggs. Gently pound turkey pieces to 1/3" thick. Dip turkey in egg, then roll in flour mixture. In large skillet, melt 1 T butter in 1 T olive oil. add turkey & cook over mod-hi heat until browned & just cooked, @ 3 min per side. Serve with lemon quarters. 394 Cal
