Green Chile Chili

Ingredients

  • 1 T olive oil
  • 12 oz ground beef
  • 1 1/2 chopped onion
  • 1 T chili pepper
  • 1 T paprika
  • 5 cloves minced garlic
  • 1 120z bottle dark beer
  • 1/2 C salsa verde
  • 1 4 oz. can diced green chiles, undrained
  • 1 15 oz. can crushed tomatoes
  • 1 15 oz can kidney, rinsed & drained
  • 1/4 C shredded sharp Cheddar cheese
  • 1 green onion, sliced

Preparation

Step 1

In large Dutch oven add oil, swirl to coat. Add beef, saute for 5 min, stirring to crumble.
Add chopped onion, chili powder & paprika; saute 4 min., stirring occasionally. Add garlic, saute for 1 min., stirring constantly.
Stir in beer, bring to a boil. Cook 15 min. or until liquid is almost evaporated. Add salsa & next 3 ingredients. bring to a boil. reduce heat, & simmer 30 min., stirring occasionally.
Ladle into bowls & top with Cheddar cheese & sliced green onion
