Flank Steak with Herbed Salsa

Ingredients
- 2 med. chopped tomatoes
- 4 finely chopped scallions
- 1 C finely chopped cilantro
- 1/2 C finely chopped mint leaves
- 1 seeded & minced jalapeño
- 1 clove minced garlic
- Juice of 1 lemon
- Salt & pepper
- 1 1lb flank steak
- 2 t olive oil

Preparation
Step 1
Light grill. In bowl combine tomatoes, scallion, cilantro, mint, jalapeño garlic & lemon juice.
Season with salt & pepper
Rub steak with oil & season with salt & pepper. Grill over hi heat, 3 min. per side for med-rare. Transfer to carving board, let rest 5 min. Thinly slice steak & serve with salsa.
