Tossed Shredded Chicken Salad

Ingredients

  • 2 chicken breasts, simmered 20 mintues and drained
  • 2 quarts vegtable oil
  • 8 squares wonton dough, cut into 1/8-inch strips
  • 1/3 package rice noodles
  • 1 teaspoon wet mustard
  • 1/4 teaspoon five spice
  • 1 teaspoon sesame oil
  • 2 tablespoons soy sauce
  • 3 tablespoons chopped, toasted almonds
  • 1/2 cup sliced green onions
  • 1/2 teaspoon salt

Preparation

Step 1

1. Heat oil to 350. When hot enough for noodles to pop up, fry the dough strips to light tan. Remove and drain on paper towel.
2. Divide noodles into three. Fry and remove immediatley.
3. Deep fry chicken 5 minutes, drain, cut into strips.
4. Mix mustard, 5 spice, oil, soy, nuts & green onions.Add the chicken.
5. Add the wontons and noodles, mix well and serve over lettuce bed.
