Coffee Spumoni Ice Cream

Ingredients

  • 4 egg yolks
  • 7 T. sugar
  • 6 T. strong coffee
  • 2 shots rum
  • 1 cup whipping cream

Preparation

Step 1

In a double boiler, whip egg yolks, sugar and coffee for 10-15 mins., do not boil! Once it has increased in volume and cooked at least 10 mins. add rum and mix in gently.

Pour into mixing bowl and let cool. After cool, whip cream in separate bowl and gently fold into egg mix by gently pulling from the bottom and folding over top. Once mixed, placed in freezer for 1 hour.
