Red Velvet Cupcakes

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup low fat buttermilk
  • 1 tablespoon plus 1 teaspoon red food coloring
  • 1 /2 teaspoons vanilla extract
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsalted butter (1 1/2 sticks), softened
  • 3 large eggs
  • 1 cup mini chocolate chips

Preparation

Step 1

1. Preheat oven to 350°. In medium bowl, stir flour, cocoa, baking soda and salt until well blended. In small bowl, combine buttermilk, food coloring and vanilla extract.
