Ingredients
- 1/2 c raisins (op.)
- Pecans
- 1/4 c soft butter
- 1/2 c firmly packed br. sugar
- 2 egg yolds
- 1 c corn syrup
- 1 t vanilla
- dash of salt
- 2 egg whites
Preparation
Step 1
Line tart pans with pastry. Sprinkle raisins or pecans in bottom of each. (plump raisins in hot water first if desired). Cream butter & sugar. Beat in egg yolk, corn syrup, vanilla & salt. Beat egg whites until stiff and fold in. Spoon into tart shells, about 3/4 full. Bake in 375 for about 15 min. For a smooth surface, don't allow filling to bubble. If it does, reduce heat a little.
