Ingredients
- 1 1/2 pounds broccoli
- 2 cups water
- 1 lg. Stalk celery, chopped
- 1 medium onion, chopped
- 2 Tbsp. Butter
- 2 Tbsp. All purpose flour
- 2 1/2 cups chicken broth
- 1/2 tsp. Salt
- 1/2 tsp. Pepper
- Dash of nutmeg
- 1/2 cup heavy whipping cream
- Shredded cheese, if desired
Preparation
Step 1
Cut broccoli into 1 inch pieces. Remove broccoli flowerets from stems, set aside. Heat water to boiling add broccoli flowerets and stalk pieces, celery and onion. Cover and heat to boiling. Boil about 10 minutes or until tender. (Do not drain) Carefully place broccoli into blender. Cover and blend on medium speed until smooth.
Melt margarine in 3 qt saucepan. Stir in flour. Cook stirring constantly until mixture is smooth and bubbly, remove from heat.
Stir broth into flour mixture and heat to boiling stirring constantly. Boil for 1 minute.
Stir in broccoli mixture, salt, pepper and nutmeg. Heat just to boiling. Stir in whipping cream. Heat just until hot (do not boil). Serve with grated cheese.
