Green Tomato Bread

Yes this bread is made with green tomatoes. It is very moist and a favorite by everyone when I serve it.

Ingredients

  • 3 c flour
  • 1/4 teas baking powder
  • 1 teas baking soda
  • 1 teas salt
  • 2 c sugar
  • 1 T ground cinnamon
  • 2 large eggs, lightly beaten
  • 1 cup vegetable oil
  • 1 teas vanilla
  • 2 c finely chopped green tomato(about 2 medium)
  • 1 1/2 c chopped pecans, optional

Preparation

Step 1

Combine first 6 ingredients in a large bowl, make a well in center of mixture. Combine eggs, oil, vanilla; stir well. Add to dry ingredients stirring, just until moistened. Fold in tomatoes and pecans.
Spoon batter into 2 greased and floured 8 1/2 by 4 1/2 loaf pans. Bake at 350 for 1 hour or until a wooden toothpick inserted in center comes out clean. Cool 10 minutes and remove from pans.
