Ingredients
- SWEET POTATO PUFF
- 2 lbs dark sweet potatoes
- 1 cup canned pumpkin puree
- 1 egg
- 3 egg whites
- 1/2 cup light sour cream
- 2/3 cup Splenda granulated
- 1 Tbs butter, melted
- 3/4 tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla
- 1/4 cup chopped pecans
- Pierce potatoes with fork.
- Mirowave 10 min
- 350 * preheatd oven
- Spray 2 quart or soffle dish
- Scoop out the potatoes and mix with other ingredients, EXCEPT nuts.
- Pour into dish
- Top with nuts
- BAKE 25-30 min
- Or until center slightly puffs.
