Ingredients
- 1 small sweet potato
- 1/2 banana
- 1/2 teaspoon/2.5 ml cinnamon
- 1 teaspoon/5 ml vanilla
- 1 teaspoon/5 ml honey
- 1 Tbsp./3.5 g chia seeds
- 1 cup/8 oz/ 250 mL coconut milk, unsweetened
- Ice
Preparation
Step 1
1.) Bake sweet potato at 425 F/218 C for 40 to 60 minutes or until tender.
2.) Let sweet potato cool or cook the night before and let chill in refrigerator overnight.
3.) Peel banana.
4.) Add 1/2 banana, sweet potato, vanilla, cinnamon, honey, chia seeds, coconut milk and ice to blender.
5.) Blend until smooth, about 45 – 60 seconds and pour into glass.
6.) Sprinkle with cinnamon and chia seeds.
7.) Enjoy!
