- 2 15 oz. cans pineapple chunks
- 1 c. sugar
- 6 T. flour
- 2 c. shredded cheddar cheese
- 1/2 c. melted butter (sometimes I use 1/2 stick)
- 1 c. cornflakes or Ritz crackers
Drain pineapple, reserving 6 T. of juice. Combine sugar and flour. Stir in reserved pineapple juice. Add cheese and pineapple chunks. Mix well. Spoon into a greased baking dish. Sprinkle mixture of butter and cornflakes or crackers over the top. Bake for 20 to 30 minutes.
