Ingredients
- 2 cups butter (1 lb)
- 2 cups sugar
- 8 to 10 eggs (2 cups)
- 4 cups sifted flour
- 1 1/2 teaspoon salt
- 1/2 pound shelled walnuts
- 8 oz. Glazed cherries
- 1 1/2 cup currants
- 1 teaspoon vanilla
Preparation
Step 1
Have the butter and eggs at room temperature before
starting. Cream the butter thoroughly and gradually blend in the sugar, beating well. Add the vanilla.
In a second bowl, beat the eggs until light and fluffy.
Add to the butter and sugar mixture gradually blending each small addition. Sift together the flour and salt and add to the batter gradually, beating smooth until it has a satiny smoothness in appearance.
In a bowl, mix the slightly broken walnut meats, the
whole glazed cherries and the currants thoroughly together. Grease and flour a 10-inch Tube pan and spoon 1/3 of the batter into the bottom. Arrange half the mixed fruit and nuts over the batter and spoon on another 1/3 of the batter. Layer the second half of the fruit and nuts and top with the remaining batter.
Bake at 325 degrees for about 2 hrs or less. Let cool
in pan 10 minutes and remove to rack to cool.
