Grasshopper Pie

Ingredients

  • 1 1/2 cups fine chocolate sandwich cookie crumbs
  • 1/2 cup sugar
  • 1/4 cup softened butter
  • 2 envelopes unflavored gelatin
  • 1/4 cup sugar
  • 1/8 tsp salt
  • 2 cups boiling water
  • 1 cup watkins lime-lemon flavored lollipop punch concentrate
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • 1 tsp brandy extract
  • 1 egg white
  • 1 cup whipping cream (1/2 pint)
  • Whipped cream
  • Chocolate, curls or mint patties

Preparation

Step 1

Combine crumbs, the 1/2 cup sugar, and butter; mix well. Press firmly over bottom and sides of a 10 inch pie plate. Bake at 375 for 6-8 mins and cool. For filling, combine gelatin, 2 tblsp sugar and salt; add boiling water and stir until gelatin is dissolved. Stir in Lime-Lemon punch and extracts. Chill until slightly thickened. Beat egg white until foamy; add reserved sugar gradually, beating after each addition. Continue beating until meringue stands in shiny, soft peaks. Whip cream. Blendmeringue and whipped cream into remaining gelatin mixture. Chill until quite thick. Spoon into crust; chill until firm. Garnish with additional whipped cream and chocolate as desired.
