CREAMY LEMON COLESLAW

Ingredients

• 3 tbsp (40 mL) water
• 2 tbsp (25 mL) sour cream
• 1 tbsp (15 mL) mayonnaise
• 1 tbsp (15 mL) fresh lemon juice
• 1 tsp (5 mL) sugar
• 1/2 tsp (2 mL) grated lemon peel
• 1/4 tsp (1 mL) salt
• 1/4 tsp (1 mL) freshly ground pepper
• 4 cups (1 L) coleslaw mix
• 1/2 cup (125 mL) thinly sliced green onions
• 1/2 cup (125 mL) chopped fresh parsley

Preparation

Step 1

To prepare dressing, whisk together first 8 ingredients (water through pepper) in a bowl until blended. Add coleslaw mix, onions and parsley and toss to coat with dressing.
