Organic Meat Loaf

Ingredients

  • 2 pounds of organic ground beef or buffalo
  • 1 medium organic onion, peeled and finely chopped
  • 1 organic carrot, peeled and finely chopped
  • 1 stalk organic celery, finely chopped
  • 4 tablespoons organic butter
  • 1/4 teaspoon organic dried pepper flakes
  • 1 teaspoon organic dried thyme
  • 1 teaspoon organic cracked pepper
  • 1 teaspoon Celtic sea salt
  • 1 1/2 cups organic whole grain bread crumbs
  • 1 cup organic cream
  • 1 organic egg
  • 1 tablespoon organic fish sauce
  • 4 tablespoons organic tomato ketchup
  • 1 cup water

Preparation

Step 1

Sauté onions, carrots and celery in butter until soft.
1. Add pepper flakes, thyme, pepper and salt and stir around.Meanwhile, soak breadcrumbs in cream.
2. Have 9-inch by 13-inch loaf pan ready.
3. Using your hands, mix meat with sautéed vegetables, soaked bread, egg and fish sauce.
4. Form into a loaf and set in the pan.
5. Ice with ketchup.
6. Add about 1 cup water to pan.

Bake at 350°F for about 1½ hours.

Serve with Ketchup and cultured vegetables.
