Roasted Carrots With Maple Syrup

Ingredients

  • 2 pounds peeled baby carrots
  • 3 cloves garlic, mashed, plus 8 cloves, unpeeled
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/4 cup maple syrup

Preparation

Step 1

Preheat the oven to 450 degree F. on a rimmed baking sheet, toss together the carrots, mashed garlic, whole garlic, oil and salt and pepper. Roast for 30 minutes or until nicely browned and fork-tender, stirring several times. Transfer to a serving bowl and stir in the maple syrup.
