Chicken or Turkey Croquettes for 2

Ingredients

  • 4 Tablespoons butter
  • 5 Tablespoons flour
  • 1 cup milk
  • 1/2 cup chicken stock
  • 1 cup finely chopped or ground chicken or turkey
  • 1 Tablespoon onion, grated
  • 1 Tablespoon chopped parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 egg
  • 1 Tablespoon water
  • Dry bread crumbs, cracker meal or Panko

Preparation

Step 1

1. Make a thick cream sauce with butter, flour, milk and stock. Cool.

2. Add chicken or turkey, onion, parsley, salt and pepper. Shape as desired.

3. Beat egg and add water. Dip croquettes in egg and roll in crumbs. Set aside in refrigerator for one hour or more.

4. Fry in deep hot fat unti;l a delicate brown. Drain on absorbant paper. Serve hot.

Delicious with a hot mushroom sauce or a chicken or turkey gravy, served with hot mashed poitatoes.
