Chicken Croquettes

If you are a foodie (which I’m guessing you are if you are reading this!)…then you know how significant is the role of a snack at times when you are entertaining a few guests at home or even when you are preparing a surprise for your loved one….

Here’s a delicious…mouth watering snack for that perfect moment!

Ingredients

  • For the coating:
  • 8 ounces of chicken (I prefer with bones, but you could use boneless too if you like)
  • 1 tablespoon of oil
  • 2-3 fresh green chilies- chopped up
  • 1 tablespoon butter (softened or melted)
  • 1/2 an onion- chopped up
  • 1-2 tablespoons of flour
  • 1/4 cup of milk
  • 1 slice of fresh bread- to get fresh crumbs, grind this bread slice
  • 1/4 tablespoon of red chili flakes
  • 1/2 tablespoon of salt or to taste
  • 1/4 tablespoon of pepper, or just a pinch
  • 1 egg - separate
  • 2 tablespoons of egg white for coating
  • 1/4 cup of flour
  • 1 tablespoon of oil
  • 2 tablespoons of water mixed with two (2) tablespoons of the egg white that we kept separately
  • Mayonnaise (at the time of serving the dish)

Preparation

Step 1

Take the chicken pieces and wash them well. Now place the chicken in a dish and coat the pieces well with oil.

Microwave the chicken pieces for four to five (4-5) minutes (covered).

Now take the soft pieces of chicken and finely shred them into tiny little pieces. (In case you are using chicken with bones, discard the bones).

Next, mix the finely chopped onions, softened butter, Maida (flour) and chilies in a dish. Mix these ingredients well and microwave for one (1) minute.

Now, to this dish, add the milk and microwave (uncovered) again, after mixing, for one (1) minute.

Next add the rest of the ingredients, mix everything nicely and make shapes like rolls.

Now take this roll and dip it in the egg mixture. Once done, roll these in the Maida (flour) to bind it well.

Grease a non stick pan or tawa with some oil or butter. Place the rolls carefully in it.

Put the tawa or pan on high rack and then grill for about eight to ten (8-10) minutes.

Change the sides and then grill again on the other side for about four to five (4-5) minutes.

Keep checking. The rolls should turn a golden brown color.

Once done, serve hot with a topping of mayonnaise.
