Ingredients

  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 1/2 pint cherry tomatoes, sliced
  • 1/2 cup celery
  • 1/4 cup red bell pepper
  • 1/4 red onion, diced
  • 4 Tblsp cilantro
  • 1 clove garlic, minced
  • 2 tsp cumin
  • 1/4 tsp cyan pepper
  • 2 + Tblsp balsamic or red wine vinegar
  • salt and pepper to taste.
  • Juice of 1 lime
  • Tortilla chips, for dipping

Preparation

Step 1

Gently toss ingredients together in small bowl.
Refrigerate at least 20 minutes before serving, to allow flavors to blend together.

Serve with tortilla chips.
