Banana Bread Cinnamon Rolls

Heather found this delicious recipe online, and made some minor modifications to it. It's great for a lazy weekend kickoff!

    mashed ripe bananas

  • 3

    tbsp sugar

  • 1

    can cinnamon rolls with icing (I like the Pillsbury Grand Cinnabon rolls)

  • ½

    cup flour

  • cup brown sugar

  • ¼

    cup butter

  • ¼

    cup maple syrup


Heat oven to 350 degrees. Butter an 8x8 baking dish. In a large bowl, beat eggs, bananas and sugar with whisk until well blended. Slice each cinnamon roll into slices, then chop into smaller pieces. Stir dough pieces into egg mixture until well coated. Spoon mixture into baking dish, spread out evenly. In smaller bowl, mix flour and brown sugar. Cut in butter with fork until mixture resembles coarse crumbs. Sprinkle over baking dish. Bake for 45 minutes or until set and golden. Cool 10 minutes. Mix cinnamon roll icing with maple syrup until well blended, pour over the warm banana bread cinnamon rolls.
