Ingredients
- 1/2 cup (125 mL) crumbled soft goat cheese
- 1/4 cup (50 mL) butter, softened
- 2 tbsp (25 mL) chopped sun-dried tomatoes
- 1 tbsp (15 mL) chopped drained capers
- 1/4 tsp (1 mL) freshly ground pepper
- 4 rib-eye steaks, 1 inch (2.5 cm) thick
Preparation
Step 1
To prepare dried tomato butter, use medium speed of an electric mixer and beat together goat cheese and butter until fluffy. Stir in tomatoes, capers and pepper. Spoon into a small bowl. Cover and refrigerate until serving. Grill steaks over medium heat on natural gas barbecue to desired doneness. Serve steaks topped with a generous dollop of dried tomato butter.
