Banana Chocolate Chip Muffins

Ingredients

  • 1 1/2 cups flour
  • 2/3 cups sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup mashed ripe bananas
  • 1 large egg
  • 1/4 cup (1/2 stick) butter, melted
  • 1/4 cup fat free or light sour cream
  • 2 tsp vanilla extract
  • 1/4 cup low-fat milk
  • 1/2 cup mini semi sweet chocolate chips

Preparation

Step 1

1. Heat oven to 350 degrees
2. Line mini-muffin cups with muffin papers
3. In medium size bowl, combine flour, sugar,
baking powder, salt and stir with a fork to blend
4. In a mixing bowl, combine the mashed bananas,
egg, melted butter, sour cream, vanilla extract
and milk
5. Beat on medium until well blended.
6. Reduce the speed to low and blend in the dry
ingredients (do not overmix)
7. Stir in the mini chocolate chips
8. Fill each muffin cup with 1 level tblsp of batter
9. Bake the muffins for about 20 minutes or until
the tops are golden and a toothpick comes
out clean except for some melted chocolate
10. Transfer the muffins to a rack to cool.
