Devils' Food Cake with Fluffy White Icing

Ingredients

  • Devils Food cake mix
  • 3 Tbs unsweetened cocoa powder
  • 1 1/3 cups buttermilk
  • 1/2 cup canola oil
  • 3 eggs
  • 1 tsp vanilla

Preparation

Step 1

Set a rack in the middle level of the oven and preheat to 350.
Mix one minute and scrape down sides of bowl.
Increase the speed to medium and beat the batter continously for 3 minutes. Divide the batter equally between the prepared pans and smooth the tops.
Bake the layers until they are well risen and feel firm when pressed in the center with a fingertip, about 25-3o minutes.

Cool in the pans on racks for 5 minutes, then unmold, turn right side up again and cool completely.
