Ingredients
- 3 - 5 bananas
- 2 1/4 tbsp. cornstarch
- 1/4 c. cold water
- 1 1/4 c. boiling water
- 1 tsp. butter
- 1 tsp. vanilla
- 3 egg yolks
- 2/3 c. granulated sugar
- 3 egg whites
- 3 tbsp. granulated sugar
Preparation
Step 1
Make pie crust and bake.
Mix cornstarch and cold water together. Add everything except for the bananas in a heavy saucepan. Boil until mixture is thick, stir constantly - do not burn. Place a thin layer of filling in baked pie shell, then the sliced bananas. Repeat this until all is used. Whip up the egg whites and sugar to make a meringue. Top the pie with the meringue and brown the meringue in a slow oven.
