Chicken and Wild Rice Salad

Ingredients

  • Vinaigrette
  • 1/3 c. sherry wine vinegar
  • 1 garlic clove, minced
  • 1 t. Dijon mustard
  • 1 t. sugar (may need more)
  • 2/3 c. olive oil (may need less)
  • 3-4 chicken breasts, cooked and shredded
  • 2 c. Wild Rice (cooked in chicken broth)
  • 1/2 - 1 c. coarsely grated peeled carrots
  • 1/2 c. chopped green onions
  • 1/2 - 1 c. chopped celery
  • 1/3 c. chopped toasted nuts (almonds, walnuts or pecans)
  • 1/3 c. (packed) dried fruit (golden raisins, cherries, cranberries)
  • 2 T. fresh herbs (tarragon, dill or parsley)

Preparation

Step 1

Mix vinaigrette ingredients together.

Prepare wild rice according to directions. Cool rice and mix with remaining ingredients. Add vinaigrette prior to serving.
