Seafood Newburg

Very tasty and rich seafood dish containing Scallops, fish and shrimp, crab or crawfish tails.

Ingredients
- Sauce:
- 2 c. light cream
- 1/2 c. butter
- 1/2 tsp. paprika
- 1/2 c. cooking sherry
- 3 tbls. flour
- Fish ingredents:
- 1 lb. scallops
- 1 lb. fish or logostino
- 1 lb. shrimp....
- I have used crawfish tails or pieces of crab in place of shrimp , since I prefer those over shrimp. You can use any combination.
- Topping:
- 1 roll of Ritz cracker
- 1/2 stick of butter, melted

Step 1
Sauce:
Warm cream and butter. Mix flour with cooking sherry and add to cream. Cook until thickened.
Cook fish and scallop and shrimp (if using raw) in hot salted water until scallops begin to look white and fish begins to flake. Add shrimp to heat if using precooked. Using a slotted spoon remove fish, etc. from water and drain a little. Put into a 13 X 9 pan and pour sauce over fish mixture and mix.
Crumble one roll of Ritz crackers in a bowl. Melt 1/2 stick of butter and add to crackers. Mix together. Put on top of casserole and back at 350 degrees for 30 minutes.
