Spicy Sweet-Potato Fries

Preparation

1. Preheat oven to 425 degrees F. Spray a rimmed baking sheet with nonstick cooking spray. 2. Peel sweet potatoes. Cut sweet potatoes in half lengthwise. Cut halves into 1/4-x-4-inch pieces. 3. In a large bowl, combine sweet potatoes with vegetable oil, tossing gently to coat. Add salt, cinnamon, paprika, and cayenne to sweet potatoes. Toss gently to coat. 4. Spread sweet potatoes in a single layer on prepared pan. 5. Bake for approximately 20 minutes, or until golden brown, stirring once.
