Ingredients

  • baby arugula
  • 5 fresh figs quartered
  • molasses -mustard dressing (recipe included)
  • salt and pepper
  • 1/4 lb thinly sliced country ham
  • 1/2 c toasted pecans
  • 2 green onions thinly sliced
  • 4 slices country bread, grilled
  • 1/2 c ricotta

Preparation

Step 1

1)put arugula and figs in bowl and add half the dressing; season with salt and pepper

2) divide greens among 4 plates. place a slice or two of ham on each plate. drizzle with dressing and top with pecans and onions.

3) top the grilled bread with ricotta and serve.

Dressing: in md bowl whisk together 3t molasses, 2t water, 1 1/2 t red wine vinegar, 1 1/2 t dijon, 1 tsp honey, 1/2 tsp salt and 1/4 tsp pepper. slowly whisk in 1/2 c canola oil til blended
