Ingredients
- 1 pkg white & wild rice -- original flavor
- 2 ripe avocados
- 1 tablespoon fresh lemon juice
- 3 cups cooked chicken -- cut into bite-sized pieces
- 4 scallions -- chopped
- 1 cup Italian dressing
- 1/2 cup toasted pine nuts or sliced almonds
- 1 cup cherry tomatoes

Preparation
Step 1
1. Prepare rice according to package directions.
2. Dice avocados and toss with lemon juice.
3. When the rice is ready, stir in chicken and scallions, add dressing and toss well.
4. Pour into a serving dish and chill.
5. Garnish with avocados, nuts and cherry tomatoes.
