Ginger Spice Cookies

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 egg
  • 3/4 cup vegetable oil
  • 1/4 cup molasses
  • 1 cup brown sugar, packed
  • 1/3 cup sugar

Preparation

Step 1

Arrange oven racks in top and bottom thirds of oven. Preheat oven to 350F. Lightly coat 2 baking sheets with oil.

In medium bowl, stir flour with baking soda, cinnamon, giner, nutmeg and salt. In a large bowl, beat egg. Then beat in oil and molasses. Beat in brown sugar until evenly mixed. Gradually stir in flour mixture until well mixed.

Place sugar in a small bowl. Pinch off about 1 Tbsp dough and roll into a ball. Roll in granulated sugar until evenly coated and place on baking sheet at least 2 inches apart. Bake on 2 racks in preheated oven, switching position of sheets halfway through baking, until cookies begin to crack and set around the edges, 7 to 10 minutes. Remove baking sheets to a rack and let cool on sheets.

Store cookies in an airtight container at room temperature for up to 5 days or freeze up to 1 month.

Makes 40 to 45 cookies.
