Ingredients
- 2 lbs (approx 2 to 3 large sweet potatoes)
- 4 tablespoons unsalted butter
- Heavy cream
- variation: stir in 2 oz of goat cheese before serving
Preparation
Step 1
Peal each sweet potato. Cut lengthwise in half, and cut each half again into quarters, then slice into ¼ inch slices. Place sliced potatoes into a sauce pan. Add butter and 2 tablespoons heavy cream. Cover potatoes and cook on low for about 30 to 35 minutes until potatoes are tender. Add 1 tablespoon additional heavy cream and mash potatoes with hand masher in pan and serve.
