    recipie savory pie pastry, baked and cooled

  • ¼

    cup freshly grated Parmesan cheese

  • ½

    pound fresh mozzarella, cut into cubes

  • ¼

    pound fresh, soft goat cheese, cut into cubes

  • 4

    thin slices flavorful ham, cut into matchsticks

  • 6

    eggs, lightly beaten

  • 1

    cup heavy cream

  • Salt and freshly ground black pepper, to taste

  • 1

    tablespoon chopped fresh thyme


1. Set the oven at 350 degrees. Sprinkle the Parmesan over the pastry crust. Arrange the mozzarella and goat cheese on top. Scatter the ham all over the cheeses. 2. In a bowl, combine the eggs, cream, salt, pepper and thyme. Pour the egg mixture into the pastry shell and transfer the pie to the oven. 3. Bake it for 50 minutes or until the custard is set in the center. If the crust begins to get too brown, cover the pie loosly with foil, setting the foil shiny side down, and continue baking. 4. Let the pie cool to lukewarm and cut into wedges. Serve at room temperature.
