Rhubarb Muffins

Ingredients

  • 1 c. sugar
  • 1/4 tsp salt
  • 3 tble soft margarine
  • 2 beaten eggs
  • 1 tsp vanilla
  • 3/4 c sour milk or buttermilk
  • 2 1/2 c flour
  • 1 tsp soda
  • 3 c finely diced fresh rhubarb
  • 1/2 tsp cinnamon (optional)

Preparation

Step 1

Combne sugar, salt, and margarine; add eggs and vanilla. Beat well. Sift and add dry ingredients with sour milk; fold in rhubarb. Bake for 20 to 25 mintues at 375 degrees. Be careful not to overbake.
