Ingredients
- 1 package active dry yeast
- 1/2 cup lukewarm water (105 to 115 degrees)
- 3/4 cup unbleached flour
Preparation
Step 1
In a large jar or crock with a cover combine the yeast, water, and flour. Stir the ingredients to form a thick batter. Cover, leaving the lid loose in order to allow for expansion and let the batter rise overnight or longer in a warm (80 to 90 degree) place. The mixture should be warm but not hot. When ready, the starter " sponge" will be bubbly and have a pleasantly sour smell.
