  • 1 JAR (6 OZ) DEVONSHIRE CREAM (OR 1 CUP SOFTLY WHIPPED CREAM)
  • 2 1/2 CUPS ALL PURPOSE FLOUR
  • 2 TBSP. GRANULATED SUGAR
  • 1 TBSP. GRATED LEMON ZEST
  • 2 1/2 TSP. BAKING POWDER
  • 1/4 TSP. BAKING SODA
  • 1/2 TSP. SALT
  • 1/2 CUP COLD UNSALTED BUTTER, CUBED
  • 1 CUP BUTTERMILK
  • 1 EGG.
  • TOPPING:
  • 1 EGG, LIGHTLY BEATEN
  • 2 TSP. GRANULATED SUGAR

IN A BOWL, COMBINE STRAWBERRIES, SUGAR AND LEMON ZEST; COVER AND REFRIGERATE UNTIL CHILLED (MAKE AHEAD - REFRIGERATE FOR UP TO 6 HOURS)

SCONES: IN A LARGE BOWL, WHISK TOGETHER FLOUR, SUGAR, LEMON ZEST, BAKING POWDER, BAKING SODA AND SALT. USING PASTRY BLENDER OR 2 KNIVES CUT IN BUTTER UNTIL IN COARSE CRUMBS. WHISK BUTTERMILK WITH EGGS, ADD TO FLOUR MIXTURE, STIRRING WITH FORK TO MAKE SOFT DOUGH.

WITH LIGHTLY FLOURED HANDS, PRESS DOUGH INTO A BALL. TURN OUT ONTO FLOURED SURFACE; KNEAD GENTLY 10 TIMES. PAT OUT INTO SCANT 3/4" THICK ROUND. USING 1 3/4" FLOURED ROUND OR FLUTED COOKIE CUTTER, CUT OUT ROUNDS, PATTING OUT SCRAPS AND CUTTING MORE ROUNDS, TWICE. PLACE ON PARCHMENT PAPER-LINED BAKING SHEET.

TOPPING: BRUSH SCONES WITH EGG: SPRINKLE WITH SUGAR. BAKE IN 400 DEGREE OVEN, JUST UNTIL BOTTOMS ARE GOLDEN, ABOUT 12 MINUTES. LET COOL ON PAN ON RACK. (MAKE AHEAD: STORE IN AIRTIGHT CONTAINER FOR UP TO 24 HOURS). SERVE WITH STRAWBERRIES AND CREAM.

CHANGE IT UP: MINI CHOCOLATE SCONES:
REDUCE FLOUR TO 2 CUPS. ADD 1/2 CUP COCOA POWDER. INCREASE SUGAR TO 1/4 CUP. OMIT THE LEMON ZEST.
