Ingredients

  • 1 lb mussels
  • 2 tbsp butter
  • 1 clove garlic, crushed
  • 1/2 white onion,,diced
  • 1/2 fennel bulb, thinly sliced
  • Salt and pepper to taste
  • 1/2 cup white wine
  • (Or beer stock, etc)
  • 1 tbsp fresh basil
  • 1/2 tbsp fresh tarragon

Step 1

Give mussels a quick rinse with fresh cold water. Set aside. Melt butter in saucepan over low heat. Add garlic and sauté for about 30 seconds before adding onions, fennel or other vegetables. Add salt and pepper to taste. Sauté until,soft. Toss mussels with vegetable mixture, then add wine, beer or stock and toss again. Cover with tight-fitting lid and cook on medium-high heat for up to five minutes or until mussels start to separate from their shell. Remove from heat pour into serving dish (with liquid) and add your favorite fresh herb,,such as fennel, cilantro, tarragon or basil.
