Strawberry Coffee Cake

I love this recipe because it’s all mixed together in the same bowl. Throw in the dry ingredients, add the wet and voila! Ready to go in the oven in no time flat. The only ingredient you may not have is the greek yogurt. You could easily substitute regular yogurt or sour cream. I actually used Chobani strawberry greek yogurt and I thought it worked really well. This batter can be used for a base and any type of fruit could be added. Blueberries or peaches would be wonderful. I’m sure it could also be cut in half if you don’t need to feed an army!

Ingredients

  • Topping:
  • 4 c. flour
  • 1 1/4 c. sugar
  • 4 t. baking powder
  • 1 t. salt
  • 1 1/2 c. milk
  • 6 oz. greek yogurt
  • 1/2 c. vegetable oil
  • 2 eggs
  • 2 t. vanilla
  • 3 c. strawberries, diced
  • 3/4 c. sugar
  • 2/3 c. flour
  • 6 T. butter softened

Preparation

Step 1

1.Preheat oven to 350 degrees.
2.Grease one 9 x 13 or two smaller pans. I used two 8 x 6 pyrex pans.
3.Combine first 4 ing. in large mixing bowl.
4.Add remaining ingredients mixing just enough to combine.
5.Gently fold in strawberries.
6.Pour into prepared pans.
7.Mix the topping ingredients together with a fork.
8.Sprinkle on top of batter.
9.Bake 45-55 min. or until a pick inserted in center comes out clean.
