Charcuterie Cones

Ingredients

  • 24 thin slices soppressata
  • 1 small shredded head of radicchio
  • 5 stemmed, seeded, chopped peperoncini
  • 2 oz goat cheese
  • 1 t red wine vinegar
  • 1 t olive oil
  • 3 T toasted pine nuts

Preparation

Step 1

In bowl, combine all ingredients except soppressata
On work surface mound some radicchio salad on soppressata slices and roll up into a cone.
Secure with toothpick & serve
