Ingredients

  • Marinade:

  • 1

    T. fresh lime juice

  • 1

    T. olive oil

  • 1

    T. soy sauce

  • 2

    cloves minced garlic

  • 2

    t. chopped fresh cilantro

  • 1

    t. salt

  • 1/2

    t. crushed red pepper flakes

  • 1

    skinless, boneless chicken breast

  • Pizza:

  • 3/4

    c. refried beans

  • 1

    T. water

  • 1/4

    t. cayenne pepper

  • 1/4

    c. sliced white onion

  • 4

    oz. mild green chilis

  • 1/2

    c. shredded monterey jack cheese

  • 1

    c. shredded cheddar cheese

  • 1

    pizza crust (homemade, Boboli's, etc.)

Directions

1. Blend marinade well. Cut chicken breast into bite-sized cubes and marinate for at least 2 hours. 2. After chicken has marinated, saute in 1 t. olive oil until cooked through. ( 2-4 min.) 3. Mix refried beans with 1 T. water and cayenne pepper. 4. Preheat oven to 475. 5. Spread bean mixture over crust. Place chicken cubes over beans. Spread onion slices over chicken. 6. Place dollops of green chilis evenly around the pizza. Top with mj cheese, then cheddar. 7. Cook pizza for 12-15 minutes or until crust begins to turn golden brown. 8. Serve with tomatillo (green) salsa and sour cream on the side. *I go easy on the red pepper flakes and omit the cayenne pepper usually. Enjoy!!
