Grasshopper Pie

Ingredients

  • CRUST
  • Butter (or hard margarine) 1/3 cup 75 mL
  • Chocolate wafer crumbs 1 1/4 cups 300 mL
  • FILLING
  • Milk 1/2 cup 125 mL
  • Large marshmallows 24 24
  • Mint liqueur, green 1/4 cup 60 mL
  • Chocolate liqueur, clear 2 tbsp. 30 mL
  • Whipping cream (or 1 envelope of dessert 1 cup 250 mL
  • topping, prepared)

Preparation

Step 1

Crust: Melt butter in small saucepan on medium. Remove from heat. Add wafer crumbs. Stir well. Reserve 2 tbsp. (30 mL) for topping. Press firmly in bottom and up side of 9 inch (22 cm) pie plate. Chill.

Filling: Heat milk in large heavy saucepan on medium-low until hot, but not boiling. Add marshmallows. Heat and stir until melted. Cool, stirring occasionally.

Stir in mint and chocolate liqueur.

Beat whipping cream in medium bowl until soft peaks form. Fold into marshmallow mixture. Spread evenly in crust. Sprinkle with reserved crumb mixture. Chill. Cuts into 8 wedges.
