Ingredients

  • In deep bowl, combine:
  • 1 tsp. finely chopped garlic
  • 2 Tbsp. soy sauce
  • 1 Tbsp. brown sugar
  • 2 tsp. lemon juice or vinegar
  • Add: 3 cups chicken or quality cuts of beef, cut in 1- inch cubes. Marinate for 30 min. or longer.
  • I threaded these meat chunks on the skewers with a combination of fresh mushrooms, red and green bell pepper, and onion.
  • Brush lightly with oil, and grill until crisp and brown. Dip in peanut sauce and serve with brown rice.
  • Spicy Peanut Sauce
  • Stir to make paste:
  • 3 Tbsp. natural chunky peanut butter
  • 3 Tbsp. milk (or water)
  • Add:
  • 1/4 cup soy sauce
  • 3 Tbsp. brown sugar
  • dash garlic powder
  • 1 tsp. lemon juice
  • 1 bay leaf

Step 1

Mix and let stand several hours at room temp to blend flavors. Remove bay leaf before serving.
