VEAL TERRINE

Ingredients

  • 2 lbs veal, ground 3-4 times
  • 6 strips bacon, chopped
  • 2 tsp salt
  • 1/4 cup chopped chives
  • 2 eggs
  • 1 cup heavy cream
  • 1 tbsp each chopped fresh thyme, rosemary and sage
  • 1/2 cup shelled, blanched pistachios

Preparation

Step 1

Preheat oven to 350°F. Mix all ingredients together well. Pack into 2 quart terrine. Bake for 1 hour. Slice and serve with curry mayonnaise and french bread.
